Pomegranate Salad - Ann from Colorado


Total Time: 60 minutes
Servings: 6

Ingredients:

2 cups pomegranates, shelled
3-4 medium size sweet apples
1 cup golden raisins, peeled and diced
1/2 cup walnuts, chopped
2-3 cups sweetened whipped cream

Cooking Instructions:

Break open pomegranates and remove seeds. Be sure to remove bitter white pieces (this is the time consuming part). Dice apples and add to pomegranates. Add raisins, walnuts, and mix it all together with whipped cream.

Chef's Note: Try to get the sweetest pomegranates you can find.

Memorable Moment:

My grandmother passed this recipe to my mother who passed it on to me and my children. I do not remember a Thanksgiving in my entire life (and I'm 69 years old) without this salad and we try to serve it on Christmas too. My 86-year-old aunt who lives in Utah, grows the sweet variety of pomegranates in her backyard. She manages to send me a box of this wonderful fruit every year a couple of weeks before Thanksgiving.
