Servings: 8

Ingredients:

1 - 8oz package of cream cheese
1 can of whole cranberry sauce
1 8oz carton of cool whip

|-------------------------------

Cooking Instructions:

Let cream cheese soften at room temperature. mix until soft consistency while adding cranberries.Mix together. Don't overmix as it should be somewhat lumpy. Add the cool whip and blend. Chill and serve as you would a side of cranberry sauce. Simple, but delicious!

|-------------------------------

Memorable Moment:

I love cheese cake. So, it was easy to come up with this simple recipe. The ingredients just sounded too good to be able to create this scrumptuous side dish. It is a perfect compliment to your turkey dinner. The preparation is simple and only takes minutes to create. I don't have a picture, but could take one if needed.
Dixie Peas - Pat from West Virginia

Prep Time: 10 minutes
Total Time: 25 minutes
Servings: 5

Ingredients:

3 tbsp butter
1/3 cup chopped onion
1 1/2 cups thinly sliced celery
10 oz package frozen green peas
2 tbsp hot water
3/4 tsp salt
dash of pepper
dash of thyme
1/2 tsp worcestershire sauce
2 tbsp diced pimento (optional)
1 tbsp chopped parsley

-------------------------------

Cooking Instructions:

Melt butter in saucepan, add onion and celery, and saute slowly about 5 minutes, or till onion is golden brown. Add the peas; then stir in water, salt, pepper and thyme. Cover and simmer over medium heat 6 to 8 minutes, or till peas are just tender (DO NOT OVERCOOK). Add worcestershire sauce, pimento, and parsley, mixing lightly.

Wrap in foil and refrigerate until ready to cook.

-------------------------------

Memorable Moment:

I got this recipe from my Home Economics book when I was in high school in 1969. It has become a holiday tradition to make this dish for our Christmas dinner. It is a pretty, colorful dish; and it is delicious. Simple and quick to make.

Total Time: 15 minutes
Servings: 12

Ingredients:

One bag fresh whole cranberries
One whole orange
One small box Jello that goes with cranorange, I use sugar free Jello.

-------------------------------

Cooking Instructions:

Process the whole bag of cranberries with the whole orange, peel and all. Mix Jello according to package directions, but use 1/2 the water. Blend well with the fruit.

Chill till set. You can also top with wipped topping.

I use it in my oarmeal or with mayo for a yummy dressing.

-------------------------------

Memorable Moment:

Green Been Casserole - Aurora from California

Prep Time: 10 minutes
Total Time: 35 minutes
Servings: 6

Ingredients:

Use 2 cans of green beans to make 6 servings
1 can mushroom soup
3 slices bacon
1 large can cheddar onion rings

-------------------------------

Cooking Instructions:

Preheat oven to 350* degrees.

Cut bacon into small pieces and fry but not too crispy. R, remove all but a tablespoon of the bacon grease, this is for flavor. Put mushroom soup into the pan you fried the bacon in just so that it will get the flavor from it into the soup. Put into that the green beans and mix gently so as not to bruise the green beans.

Pour into a 2 quart cassrole dish, spreading it smooth. Then add the cheddar onion ringns around the outside of the dish and place in over that was heated to 350 degrees for 20 minutes.

Serve while still hot.

-------------------------------

Memorable Moment:

This was special because we shared this dish with a homeless fellow on Thanksgiving, and also with my daughter and her family for the first time.

I don't have a picture; I never thought of that, just eating it.

Cranberry Salad - Verna from Oklahoma

Prep Time: 30 minutes
Total Time: 180 minutes
Servings: 10

Ingredients:

16 oz fresh cranberries
1 1/2 cup sugar
1 large can of crushed pineapple, drained well
1 cup small marshmallows
1 cup chopped nuts
1 cup whipping cream
1/2 cup sugar

-------------------------------

Cooking Instructions:

Grind the cranberries. Add 1 and 1/2 cup sugar, pineapple, marshmallows and chopped nuts. It is best to let this refrigerate overnight.

Whip the cream and add 1/2 cup sugar. (Real whipped cream is better in this recipe than using pre-made whipped topping, but whipped topping can be substituted).

Mix whipped cream with the cranberry mixture. If possible, refrigerate for 3-4 hours before serving.

-------------------------------

Memorable Moment:

Mom fixed this every year for both Thanksgiving and Christmas.

Prep Time: 20 minutes
Total Time: 45 minutes
Servings: 8

Ingredients:

Casserole
1/2 cup butter
1/2 cup sugar
1/2 cuplight corn syrup
1Tbsp vanilla
2 eggs
4 large sweet potatoes

Topping
1/3 cup butter, cut into small pieces
1/2 cup flour
1/2 cup brown sugar
1/2 cup crushed pecans
1/2 cup shredded coconut

-------------------------------

Cooking Instructions:

Preheat oven to 350 degrees (F).

Shred sweet potatoes and microwave on high for 5 minutes. Add all ingredients for casserole - mix well. Put in greased dish.

Use a food processor or blender to blend ingredients for the topping. Sprinkle on top of potato mixture. Bake for 25 minutes.

-------------------------------

Memorable Moment:

This is the most amazing way to eat sweet potatoes. It's not low-calorie, but it is high comfort food. One time when my kids were young, they were a little intimidated about eating sweet potato casserole. After we served it twice as leftovers, they held out to avoid it. I surprised them when I said "no one leaves the table until they eat the casserole or they put their hands in it and squish it around." They had the greatest time and 15 years later bring up that holiday memory.

Servings: 15

Ingredients:

4 oz sweet onions chopped
3 oz extra virgin olive oil
2 carrots shredded
15 oz shredded English Cheddar Cheese
12 oz walnuts
8 oz Irish Oatmeal Flakes (not instant)
2 tsp Marmite (English veg. paste)
4 eggs

-------------------------------

Cooking Instructions:

Sweat the onions and shredded carrots until soft. Add walnuts until slightly brown. Place in large bowl, and add oat flakes and shredded cheese. Stir and add Marmite and 4 eggs slightly whisked.

Press into 9x13 pan and bake in 350 degree oven until brown and firm (about 40-45 minutes) Don't overcook. Cut in 3" squares.

-------------------------------

Memorable Moment:

My Auntie Brenda made this in England when I lived with her. It was a favorite of my sons, and we often had it after a long day of fox hunting. I make it in the winter, and it's wonderful hot or cold with HP sauce. It's healthy and filling. Good for a savoury snack.

Cranberries and Apples - Barbara Ann from Florida

Prep Time: 20 minutes
Total Time: 20 minutes
Servings: 8

Ingredients:

1 pkg. fresh cranberries
6 large, or 8 small, apples, peeled
1 cup orange juice
1 cup sugar

-------------------------------

Cooking Instructions:

Mix all together. Bake at 350 degrees for about an hour. Stir every 20 minutes. It will darken and thicken as it cools. You can add red food coloring as needed, if the cranberries are not deep red. WONDERFUL!

-------------------------------

Memorable Moment:

This is a family tradition. No one in the family would feel it was Christmas or Thanksgiving without this dish. You will love it.
