Mashed Potato Candy- Ro Charlton from Manchester, TN

Ingredients:

1 medium potato
1 tsp vanilla
1 lb (MOL) 10X confectioners sugar
1 cup peanut butter

Cooking Instructions:

Boil potato until done. Cool. Mash potato.  Add vanilla and begin to add 10X sugar a little at a time until a dough forms.  Keep adding sugar until a medium firm dough forms.  Turn dough out onto surface sprinkled with 10X sugar to keep it from sticking to surface.  Roll dough out to about 1/8 inch thickness. (If dough is too large, you may need to roll the dough out in 2 parts.) Spread peanut butter (like you are icing a cake) over the whole area of the rolled out dough.  Roll dough into a "log", jelly-roll fashion. Slice into 1/4 - 1/2" slices. Set on waxed paper to dry.  Store in refrigerator. (NOTE: You can wrap log in waxed paper or plastic wrap and refrigerate for 1 hr before slicing. This makes sliding easier/less messy.)

This is a recipe that my Aunt Bernice Hutchison always brought to holiday family gatherings.  It's an old- fashioned treat, and it's fun to see the look on people's faces when you tell them it's made from a potato!

WOW! I have been making this same recipe for years it was handd down to me from my mom and to her from her mom. Everyone I've made it for has just loved it. I noticed you are from TN, my mom and grandma were from TN, wonder if it's just a good ole southern recipe?! LOL. or wouldn't it be funny if we were somehow related?
