This is a recipe that my Aunt Bernice Hutchison always brought to holiday family gatherings. It's an old- fashioned treat, and it's fun to see the look on people's faces when you tell them it's made from a potato!

Ingredients:
1 (18.25 OZ) Package Spice Cake Mix
1 (3.4 OZ) Package Instant Vanilla Pudding
1 Can Pumpkin Pie Puree
1/2 cup Water
1/2 Cup vegtable Oil (or canola Oil)
3 Eggs
2 TSP Pumpkin Pie Spice
2 Cups Cold Milk
2 (3.4 OZ) Packages Cheescake Flavored instant Pudding
2 Cups Whipped Toping
1 Cup
This rice pudding is very special to Haitian culture every Christmas Eve.
My two grown sons don't think it is Christmas, unless we have these. And they don't even like dates!! But they love these. Eight years ago, I was very ill and did not do much for Christmas, but I did manage to get these made.
