Pralines - Marcie from Louisiana


Prep Time: 30 minutes
Total Time: 45 minutes
Servings: 15

Ingredients:

1 cup granulated sugar
1 cup brown sugar (packed)
3/4 cup evaporatd milk
2 TBL butter
1 tsp vanilla
1 heaping cup pecan halves

Cooking Instructions:

Mix sugars and evaporated milk in heavy saucepan.  Cook over medium heat until mixture reaches the soft ball stage (when a drop from the spoon into a cup of water forms a soft ball). Remove from heat and add butter vanilla and pecans.  Beat until mixture starts to thicken and loses it's glossiness. Drop onto greased wax paper (doubled paper works best) or greased parchment paper. 

If they flatten out too much you may need to beat a little more, then work quickly to get them on the paper before it hardens. Let cool and enjoy!

Memorable Moment:

In 1990, I was building a house on a very tight budget and I had an issue with the builder clearing the lot that had a lot of trees. My former father-in-law agreed to clear the lot, and his requested payment was a batch of pralines every Christmas. He has gotten a batch every year since, except for 2005 when my kitchen was out of commission because of Hurricane Katrina. It is now a tradition for my family that we have pralines every Christmas.
